Harvested from Quails’ Gate estate vineyards in mid October, then fermented in 3 separate batches; 20% in 2-year-old French barrels providing a warm fermentation that provides palate weight and structure. The remaining 80 % was fermented cold in 2 tanks. One was allowed to ferment completely dry and the other stopped with some residual sweetness to balance the bracing acidity that this varietal is famous for. This wine can be consumed now or careful cellaring will reward you with more complexity and depth.
